Notes lets you see old versions of notes and restore them if necessary.

These steps work in Lightning Experience. If you see the App Launcher icon () on the left side of the navigation bar at the top of your screen, you're in Lightning Experience. If not, you're in Salesforce Classic.
From the record’s Notes related list, click the note title.
In the note window, click .
From the list, select the version of the note you’d like to view.
To restore the selected version of the note, click Restore.
