Cannot see 'Send Through' option when 'Send through External Email Services' is enabled

When a Salesforce Administrator enables the feature Send through External Email Services for either Gmail or Office 365, end users may not see the option to complete the setup from within their My Email Settings section. 
 
In Salesforce Classic: Setup | Email Administration | Send Through External Email Services
In Lightning Experience: Gear icon | Setup | Email | Send Through External Email Services

Note: Users must also have the permission assigned to them through their profile or a permission set

After the Send through feature has been enabled for Gmail or Office 365, the Salesforce end user would typically expect to see the 'Send Through' option under their personal My Email Settings section.  

In Salesforce Classic: Your name | My Settings | Email | My Email Settings
In Lightning Experience: Your avatar | Settings | Email | My Email Settings

However, some Users may not see this feature exposed.

Note: This feature is only available in Lightning, however the setting is also visible in Classic.
Ratkaisu

A potential cause for this could stem from the organization using the feature Einstein Activity Capture (EAC) or Inbox license. Both features can coexist, however Salesforce end users assigned to EAC or Inbox license won’t have the ability to use the Send through External Email Services feature.
