Einstein Activity Capture and Einstein Conversation Insights have default data retention periods that vary by license type. Organizations can request an increase up to 5 years for Sales Cloud Einstein, Inbox, or High Velocity Sales licenses. Standard Einstein Activity Capture users are limited to 6 months maximum.

The limits for Einstein Conversation Insights vary by the type of data. Data retention limits described here apply to manually uploaded calls, call transcripts, call insights, call structure, generative conversation insights, and voice call recordings made through the Voice Connector app or Connect API. After the data retention period has passed, the data is removed from the system. For example, if the data retention period is 24 months, any activity that occurred more than 24 months ago is deleted from storage and the activity timeline. Activities captured by Einstein Activity Capture (EAC) aren't archived.

Confirm that your Organization's edition is either Essentials, Professional, Enterprise, Performance, or Unlimited Edition.
Have your System Administrator create a case with Salesforce Support .
In the case description, include:

Organization ID where you want the limit to be increased (Navigate to Setup | Search for Company Information in the Quick Find Box | Company Information | Salesforce.com Organization ID)

I understand there could be a small performance impact on the Einstein Suggestion algorithm and reporting using Einstein Reporting. The impact should be minimal however.
I understand this limit should not be reduced in the future. Doing so causes data loss for records occurring between the original duration and reduced duration.
I understand records beyond the data retention period will not appear on the activity timeline of related records in Lightning Experience. However, events and contacts that have been synced to Salesforce Event and Contact entities are not affected by this change.
