If you have the permissions 'Edit Tasks' and 'Edit Events' in your profile or permission set and you have completed the steps in Add Send an Email, Log a Call, New Event, and New Task Buttons to the Activity Composer but some actions are missing from the 'Activity Composer' related list, you need to associate record types with the missing Actions. Sarah, a sales representative at a software company, notices that she cannot see certain actions (like "Log a Call," "New Task," and "New Event") in the Activity tab when viewing an Account record in Salesforce Lightning Experience. This issue is affecting her ability to quickly log her interactions with clients and schedule follow-up tasks.
To resolve this issue, change the record type for the affected Global Action from '--Master--' to one of your custom record types. For more, please review Actions in Lightning Experience.
Ensure the record type assigned to the Global Action is available to the user(s) accessing the action on the record.
Check your record page settings and see if you are using Activity timeline or Related List
Note: If you do not have custom record types for these objects (Tasks, Events) then you will not be able to select a record type. If you have custom record types, they must first be associated with the Global Action in order to display in Activity Composer within Lightning Experience.

Note: When you install a managed package that contains record types associated with the Tasks object, you may notice that all of your Task related actions no longer show in the Activity Action section of record pages in Lightning Experience.
This happens if your organization did not previously use record types on the Tasks object.
If you did not previously have record types created, any global actions such as New Event, Log a Call, and New Task, will default to --Master-- after the package installation creates a record type. Global actions with the default set to --Master-- do not appear in the global actions menu. As a result, your global actions are removed from the Activities list in Lightning.
If you don't want to use the record type created by the package installation, you can create your own record type on the Tasks object.
Once you have the desired record type, assign it to the Task actions:
1. Navigate to Setup, and enter Actions in the Quick Find box.
2. Click Global Actions.
3. Click Edit next to the first Task Action that disappeared, such as 'Log a Call' or 'New Task.'
4. Specify the record type as Task and click Save. Repeat for each Task Action needed.
