Keep Picklist value for historical records but unavailable for new records

Description
Deleting the Picklist value from the available options, will remove the value from the list of available options. If you want that the records with the deleted value to keep the deleted option, you can make the value inactive or export the values and then update a custom field with the values. This is due to the Manage Inactive Picklist Values feature which prompts to replace any deleted Picklist value.

Delete a standard Picklist value

All fields have limits and those limits do on occasion get reached. When this occurs you may need to delete out older values to make room for new ones. However, if you want to keep the historical value on the record you would need to export the value, create a custom field and then import/update the custom field with the value. In Salesforce Classic 

1. Click Setup.
2. Under 'Build,' click Customize (Standard Objects) or Create | Objects (Custom Objects)
3. Click the name of an Object and then Fields.

  • Click the name of the Picklist field you want to update.
  • In the Picklist Values section, click Delete next to a value.
  • You will be prompted to select a replacement value. 

In Salesforce Lightning Experience

1. Click the gear icon then Setup | Object Manager | Select Object | Fields and Relationships
2. Click the name of the Picklist value you would like to update.
  • Click the name of the Picklist field you want to update.
  • In the Picklist Values section, click Delete next to a value.
  • You will be prompted to select a replacement value. 


Deactivate a Custom Picklist value

Follow steps 1-3 above. Then click Deactivate.

The result will be that upon creating/updating a record, the deactivated value won't show up as an available option for you to select. However, existing records that had this value prior to its deletion, will still show this value.
