Salesforce Data Loader allows you to specify audit fields when you insert or import new records from a different org or other external data source. The audit fields are:
Note: To set values for audit fields on record creation, you must have the correct features and user permissions enabled. See the Enable 'Create Audit Fields' article for more details. Since these fields are intended to be used for auditing purposes, it is only possible to set them on record creation and not update.
If you're transferring data from another CRM, you can perform an Export All on the desired object by downloading a copy of the column headers to a CSV. Cross-reference those column headers against the data available in your original CRM to fill out the CSV and prepare it for upload into Salesforce.
Once you have created any fields necessary to store the data and have prepared your CSV file for Salesforce, you'll need to insert or import the data.
Repeat this process until you have imported all the objects that you plan on transferring to your new organization.
