If you want to block users from accessing a particular Custom App in your organization, you can disable it in the Custom App Setting.
In Salesforce, System Administrators can restrict access to a Custom App for specific user profiles. This can be done either through the Profile settings (to control which apps a profile can see) or directly from the App configuration (to remove specific profiles from an app). Only users with System Administrator or 'Modify All' permissions can modify these settings.
Method 1: Disable a Custom App via Profile SettingsUse this method when you want to remove app visibility for a specific profile across all apps.
Disable a Custom App in a Profile:
Quick Tip: Only Users with System Administrator or "Modify All" permissions can modify Profile permissions.
Classic:1. Go to Setup | Administer | Manage Users | Profiles.
2. Look for the Profile you want to modify
3. Click Edit
4. Under "Custom App Settings" uncheck the Visible checkbox to disable the App
5. Click Save

Method 2: Disable a Custom App from the App ItselfUse this method when you want to remove a profile from a specific app's assignment list.
Disable a Custom App in the App itself:
1. Go to Setup | Create | Apps
2. Click Edit on the App where you want to remove the Profile from
3. Under Assign to Profiles, uncheck the Profile
4. Click Save

2. Click the drop down then click Edit on the App you want to remove the Profile from
3. Select User Profiles under App Settings
4. Under Selected Profiles, click the Profile then click the Remove icon
