This issue can occur when email signature is in the form of HTML code and HTML tags aren’t used properly. Due to this email signature will display differently in different browsers or in outlook. Sometimes it might overlap email body text.

Here are the steps:

1. Click paths:

In Salesforce Classic: Your name | My Settings | Email | My Email Settings
In Lightning Experience: Settings | Email | My Email Settings

2. In Email signature section, make sure that all HTML tags are used properly and with closing tags.
3.Ensure that email signature HTML code is enclosed within <html> and <body> tags.
   For example:
             <html>
              <body>
                       HTML code of email signature
              </body>
             </html>

4. If style attribute is used and values are given as hard coded values (for example: style="margin-top:-50px") used in email signature HTML code then, adjusting this value can reposition signature accordingly.

Note: Keep in mind that it only applies to Salesforce Classic. When you click the Send email button from the Activity History related list, don’t forget to select the option Switch to HTML from the Email Format category. This makes sure that the image from the email signature is displayed when you send an outbound email.
