Documentation indicates, "In Salesforce Classic, Lightning Experience, and the Salesforce mobile app, pasting tables is supported, but you can edit only the content within the tables."
Although it is possible to edit tables pasted into rich text area fields by using the Edit record action there is a known limitation with editing table content using inline editing.
This is because inline editing in Lightning uses the Input Rich Text Lightning Web Component. As per the documentation:
"By default, lightning-input-rich-text enables some formats with a corresponding toolbar button. Formats that don't provide a toolbar button support only pasted content. For example, the table and header formats are enabled by default but support pasted content only, and do not provide toolbar buttons. You can't create or edit a table or a header in the rich text editor."
Please instruct users to either edit the table before inserting it into the field or for tactical edits select the content you wish to change and use Cut to remove it and then type the new content.
Consider either creating or promoting a new Idea on the IdeaExchange so that we may see the ability to edit content in pasted tables via inline editing potentially added with a future release.
