The steps to create a data stream in Data 360 to ingested data from a Marketing Cloud Data Extension are outlined in Create a Data Stream from a Marketing Cloud Data Extension. This document outlines the options available for the Refresh Mode and Extract Mode settings. After the data stream is created, you will notice that you cannot edit the Refresh Mode and Extract Mode settings.
This point is confirmed in the following note from the Create a Data Stream from a Marketing Cloud Data Extension Help Documentation:
"NOTE If the Data Extension has already been extracted from Marketing Cloud previously, the Data Extension Extract Mode and Refresh Mode aren’t editable."
Even if you delete the data stream and attempt to create the data stream again, when you select a Data Extension that was previously ingested these settings are pre-populated and cannot be edited.
As it is confirmed that editing the Extract Mode and Refresh Mode is not currently supported, if you have a requirement to change these settings you would need to attempt to follow either of these options:
