Journey Builder allows you to create Leads or Contacts in a connected Agentforce Sales (formerly Sales Cloud) or Agentforce Service (formerly Service Cloud) org. When the records are injected into the Journey, using any other Entry Source than a Salesforce Data Event, we create the record in Marketing Cloud with whatever value was set as the Contact Key in the Journey (Salesforce Data Events default based on the 'Who' selected in configuration). For example, if your Data Extension has a Sendable Relatonship on EmailAddress (EmailAddress relates to Subscribers on Subscriberkey), then the records will display in All Contacts as the Email Address values.
When created in this manner, records will always exist with a Contact Key/Subscriberkey value of an Email Address. If you subsequently have a Salesforce Data Event configured to inject records that were originally created from a Journey Builder Sales/Service Activity, they will be injected with the original Contact Key value instead of the Salesforce ID (prefix of 003 or 00Q). This is currently expected behavior.
Note: Contacts created in this manner will not have Individual Email Results returned to the Sales/Service instance.
