This article outlines the format in which the data is exported when downloading the Crosstab data as a CSV or when downloading the CSV from View Data.
The following table contains the different export types available on Tableau, their corresponding character encoding, line feed codes and delimiters.

Changing the delimiters, character encoding or the line feed code is not available at the moment. To workaround this, use a text editor to convert the CSV file to the desired format.
