The document on Agentforce Analytics provides the details to gain insights into how your agents are performing.
Deleting data streams has dependencies within the Data 360 (formerly Data Cloud) configuration even after the license is removed. Hence, End-user would need to manually delete the streams.
Agentforce Analytics stores and processes data using Data 360. It consumes credits used for billing based on your usage of the feature. To stop processing Data 360 credits and unlock the Data 360 objects, turn off Agentforce Analytics in the Einstein Feedback and Monitoring Setup. You can then remove the Data 360 objects.
Below is step by step guide to turn off the associated features and then delete the concerned data streams
In the setup page, search for Einstein Audit, Analytics, and Monitoring Setup in Setup (Note: previously this setting was called Einstein Feedback or Einstein Feedback and Monitoring Setup and may still be referred to by this name in some resources.)
Toggle Agent Analytics off

Agentforce (Default)
Agentforce Service Agent
