In the Field Service Mobile app users can edit their own User record details, such as email, username, time zones, and even deactivate their user.
This is a limitation by design of the Field Service Mobile app. Thus, there's no way to restrict users' access to edit their own User record details.
Possible workaround: Create a custom validation rule on the User Object to restrict users from editing specific User record details.
Note: This behaviour has already been escalated to the Salesforce Product team and might be addressed in future releases.
