The Einstein Activity Capture (EAC) Sync Email as Activity feature requires the Enhanced Email setting to be enabled as documented here: https://help.salesforce.com/s/articleView?id=sales.eac_email_activity_considerations.htm&type=5
Current Status (Before Spring '26): Sync Email as Activity is automatically enabled for all new orgs setting up EAC. This feature also enables Enhanced Email setting. For existing EAC orgs without Email sync, this feature is also enabled automatically along with Enhanced Email provided EAC config. was modified.
Upcoming Change (Starting Spring '26): Sync Email as Activity will be automatically enabled for all new EAC orgs, and also for existing EAC orgs that do not currently have Email sync enabled. However, the Enhanced Email setting will no longer be automatically enabled for those existing EAC orgs without Email sync.
Additionally, the Enhanced Email org setting automatically enables the corresponding setting for the Outlook/Gmail Integration (see: https://help.salesforce.com/s/articleView?id=sales.app_for_outlook_enhanced.htm&type=5). Currently, EAC orgs with Sync Email as Activity cannot disable this setting, but Salesforce plans to release an enhancement that will allow administrators to toggle it off in the future.
