Whenever an outbound email is sent from Salesforce, the system automatically creates a corresponding task record. This behavior is standard Salesforce behavior and is consistent regardless of whether Enhanced Email is enabled or disabled in your org.
 
Enhanced Email is a Salesforce feature that converts email messages into EmailMessage records, providing richer tracking and threading capabilities.

Why Does Salesforce Create a Task for Every Outbound Email?

Salesforce creates a Task for each outbound email to maintain an activity history on the related record (such as a Contact, Lead, or Opportunity). This ensures that all outbound communications are logged and visible in the Activity Timeline.

This behavior cannot be disabled for standard email sends.
