Enhanced chat let users use markdown while chatting/typing messages.

If you want to disable markdown feature on enhanced chat on client side (end user side) or at agent user side within salesforce, you can reach out to salesforce support to disable it.

Its only possible in Enhanced chat V1 to disable markdown.
