Financial Summary Rollup is included in these permission sets, and Salesforce admins, an integration user, and other users need one of these permission sets:
Salesforce admins need the Data Pipelines Base User permission set to clone and customize Data Processing Engine definitions. You also need this permission set to create and run schedule-triggered flows.
To customize this feature, say by adding fields, you must create a custom permission set.
To remove user permissions from the default permission set, create a muting permission set. Then, use permission set groups to assign users the default permission set in addition to your custom permission sets. This approach is an alternative to cloning permission sets and makes sure that users always have the latest default permissions.
